This slow cooker French Onion Pot Roast is made with chuck roast, caramelized onions, and French onion soup mix. It cooks low and slow in a rich delicious gravy until the beef is perfectly fork-tender.

This recipe is so easy to make and the savory, shreddy beef is great in:

Ingredients

- Chuck roast
- French onion soup mix
- Au Jus packet
- Beef broth
- Yellow onions
How To Make It
- Pat chuck roast dry and season both sides. Sear the roast on both sides until golden brown then place in the Slow Cooker.

- Caramelize onions in the same pan over medium low heat.

- While onions are cooking, whisk together beef broth, worcestershire sauce, au jus, and onion soup mix.

- Place caramelized onions over the chuck roast and pour the broth mixture over.

- Cover and cook on low for 6-8 hours or until fall apart tender.

- Serve as a hot sandwich or piled high over mashed potatoes and enjoy!

How to Store French Onion Pot Roast
Refrigerator:
Let the pot roast cool completely, then store it in an airtight container with the gravy. Refrigerate for up to 4 days. Keeping the meat submerged in the gravy helps it stay moist and flavorful.
Freezer:
This pot roast freezes very well. Transfer cooled meat and gravy to a freezer-safe container or freezer bag and freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheating:
Reheat gently on the stovetop over low heat or in the microwave until warmed through. Add a splash of beef broth if needed to loosen the gravy.

French Onion Pot Roast in Slow Cooker
Equipment
- 1 Slow Cooker
Ingredients
- 2 tablespoon olive oil
- 3 lb chuck roast
- 1 French onion soup packet
- 1 Au Jus packet
- 1 tablespoon worcestershire sauce
- 1 cup beef broth
- salt and pepper
Instructions
- Pat chuck roast dry and season both sides with salt and pepper.
- Brown the roast in a large pan on both sides until deep golden brown. Transfer to the slow cooker.
- Cook sliced onions in the same pan for 10 minutes on medium-low heat. Place on top of the browned roast.
- Whisk together beef broth, worcestershire sauce, Au Jus, and French onion soup packet. Pour over the roast and onions.
- Cook on low for 6-8 hours or until fall apart tender. Serve over mashed potatoes or on your favorite bread as a sandwich and enjoy!
