Savory beef patties are smothered in a rich brown gravy and topped with a sunny side up egg. This Easy Loco Moco recipe can be served at breakfast, lunch, and even dinner!

This Loco Moco recipe is:
- simple to make
- packed with flavor
- easy on the wallet
Traditionally served over white rice, but equally delicious on mashed potatoes!
Ingredient Notes
- ground beef - 80/20 makes the juiciest patties but any beef will work. Ground venison is also great in this recipe!
- mushrooms - I use button, any mushroom will work.
- onions - Sweet yellow onions are best, used in both the patty and the gravy.
- beef broth - Chicken stock, or water with beef bouillon are both great substitutions.
- corn starch - Used in a slurry to thicken the gravy. A flour roux will also work.
- soy sauce - *not pictured* I prefer Aloha Shoyu but any soy sauce will work.
- eggs - *not pictured* traditionally sunny side up, but cook them however you like them!
How to Make Loco Moco
- Combine patty ingredients in a large bowl. Mix gently with your hands.
- Form into 8-10 patties. Place on a tray, cover, and transfer to the fridge while you make the gravy.
- Saute onions in a splash of oil over med-low heat for 6-8 minutes or until softened and lightly caramelized.
- Add sliced mushrooms and a tablespoon of butter to onions. Continue to cook for another 6-8 minutes, stirring occasionally. Once cooked remove to a plate and set aside.
- Turn heat to med-high and cook the patties. Work in batches so you don’t over crowd your pan. The patties do not need to be cooked all the way through, just browned on both sides. Set aside.
- Return your cooked onions and mushrooms to the pan. Add beef broth, soy sauce, and worcestershire sauce. Bring to a simmer.
- Combine corn starch and broth to create a slurry. Add to the gravy and continue to cook until thickened, around 5 minutes.
- Return your patties to the gravy and let simmer on low heat.
- To serve, scoop rice on your plate, add a patty (or 2), ladle gravy on top, followed by your egg. Garnish with sliced green onions and enjoy!
