Sheet Pan Meatloaf Recipe

This simple meatloaf recipe is made with basic ingredients, topped with a sweet and tangy glaze, and is ready in under an hour. It's old fashioned comfort food, just like Grandma used to make.

Ingredient for Sheet Pan Meatloaf

  • ground beef - I use 85/15 but use whatever ground beef you like!
  • bread crumbs - plain or seasoned
  • onion powder - adds onion flavor without having diced onion throughout your meatloaf
  • garlic powder - subtle garlic flavor
  • ketchup - used in the meatloaf and as a glaze

How to Make Sheet Pan Meatloaf

  • Add all of your meatloaf ingredients to a large bowl. Gently combine with your hands, being careful not to over mix or compact the ground beef.
  • On a lined baking sheet, form mixture into a loaf shape.
  • Mix ketchup and brown sugar and spread evenly over meatloaf, coating all sides.
  • Bake at 375 degrees for 50-60 minutes or until an internal temperature of 160.
  • Serve with your favorite sides and enjoy while hot!

How do you store this recipe?

Place meatloaf in an airtight container or large ziplock bag and keep in the refrigerator for up to 3 days or in the freezer for up to a month.

Shaped meatloaf can sit in the fridge for up to a day in advance of cooking.

What to serve with this recipe?

Mashed potatoes and steamed or glazed carrots is always a favorite. If you’re short on time, white rice and steamed broccoli make great sides as well!

Ingredients
  

  • 2 lb ground beef
  • 1 cup bread crumbs plain or seasoned
  • 2 eggs
  • 2 teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon pepper
  • 1 cup + 2 tbsp ketchup divided
  • 2 tablespoon brown sugar

Instructions
 

  • Preheat oven to 375 degrees Fahrenheit.
  • Add all of the meatloaf ingredients to a large bowl. Mix gently with hands, being careful not to compact the ground beef.
  • On a lined cookie sheet, shape mixture into a loaf shape.
  • Mix 1 cup of ketchup and brown sugar for the glaze. Spread evenly over the meatloaf, coating all sides.
  • Place on the middle rack of the oven and bake for 45-60 minutes, or until it reaches an internal temperature of 160.
  • Let rest for about 10 minutes before slicing and serving.

Notes

  • This recipe can also be made in a 9” x 5” loaf pan.
  • Using a meat thermometer is helpful to know when the meatloaf is done.
