Slow Cooker Cowboy Baked Beans

These slow cooker Cowboy Baked Beans are loaded with ground beef, smoky bacon, and tender beans in a rich and sweet sauce. They’re the perfect hearty side dish for any potluck or bbq.

These baked beans cook up low and slow in the crockpot, making them just right for a backyard cookout or family dinner.

A perfect side dish full of rich, hearty flavor- so good, they might just steal the show!

Ingredients

  • baked beans - 2 x 28oz cans
  • ground beef - I used 80/20 for this recipe
  • bacon - thin or thick cut
  • bbq sauce - use your favorite!
  • red bell pepper - adds sweetness, leave out or substitute with green
  • yellow onion - sweet Maui or vadallia

How to Make Slow Cooker Cowboy Baked Beans

  • Cook diced bacon over medium low heat until crisp. Add onion and bell pepper and cook until softened, around 5-6 minutes.
  • Add ground beef and cook until browned, breaking it up into small chunks.
  • Transfer meat mixture to the slow cooker.
  • Add canned baked beans, bbq sauce, brown sugar, and worcestershire sauce.
  • Stir to combine.
  • Cook on high for 2 hours or low for 4 hours.
  • Taste and adjust seasonings, if needed. Then serve with your favorite bbq dishes and enjoy!

Tips:

  • Be sure to cook bacon until rendered and crisp. You don’t want any flabby bacon bits!
  • Add different types of canned beans if you’d like. My cowboy likes it simple so I always stick to traditional pinto baked beans.

Ingredients
  

  • 3 slices bacon
  • ½ lb ground beef
  • ½ small onion
  • ½ red bell pepper
  • 2 garlic cloves
  • 2 28oz canned baked beans
  • ½ cup BBQ sauce
  • 2 tablespoon brown sugar
  • 4 dashes worcestershire sauce

Instructions

  • Transfer meat mixture to the slow cooker.

  • Turn the slow cooker to low and cook for 4 hours, or high for 2 hours.
  • Taste and adjust seasonings, if needed. Then serve with your favorite bbq dishes and enjoy!

Notes

  • Be sure to cook bacon until rendered and crisp. You don’t want any flabby bacon bits!
  • You can add different beans if want, like butter beans and kidney beans. My cowboy likes it simple so I always stick to traditional pinto baked beans.
